Shredded chicken and mixed vegetables just happen to be my favorite ingredients to put in a pie crust. Altogether they make one of the most comforting healthy eating dishes ever: the chicken pot pie. Also, it’s perfect for anyone who’s on a gluten free or flexitarian diet.
